Colomba Cake, or Colomba di Pasqua or Italian Dove Bread Easter Cake is a panettone-like airy cake typically made without the sultanas (raisins)! Angelo Motta was the inventor of the classic Easter colomba cake! It’s Easter season, which means it’s Colomba Cake season! In the early 1930s, Motta was inspired by an ancient recipe and gave birth to the Easter cake par excellence. To test its goodness, Angelo Motta sends his creation to famous writers and journalists, asking for their opinion. The result is an incredible success: as Ernesto Bertarelli writes, the Dove becomes a symbol of "peace and spring". Since then it is also the Easter cake of the Italians.
