I have always used OO for baking and regular flour for pizza and focaccia. This is what we in the US used to be able to find as pastry flour. It is the best ever for baking and to get the same good results time after time which, is not what you get with flour here in the US.

I would not make pasta without this amazing flour! It improves the texture of the pasta tremendously over regular flour. It is extremely fresh, and I love that they print the “use by” date on each bag.
