Grapes: 100% Sangiovese
Harvest: The grapes are manually harvested when they reach their best level of maturation (considering various parameters such as sugar content and total acidity), generally during the first and second weeks of October.
Vinification: The whole process starts with an accurate selection of the grapes followed by the destemming (the process of separating the grapes from the stems that are unnecessary). The skins are then put in contact with the must at a controlled temperature of 25-27°C for about 30 days. Once the alcoholic fermentation as well as the extraction have properly been reached, the wine obtained is separated from the skins with the use of a soft press, and poured in stainless steel tanks where it completes the alcoholic fermentation as well as the following malolactic fermentation. After 6 months the wine reaches the right grade of maturation and it can finally be stabilized, filtered, and bottled.

Structure: Medium body, delicate and balanced tannins. Smooth and easy to drink.
Pairings: Best when paired with first courses based on pasta, white meats, and fresh cheeses.
