Pressed in our experimental mill, this extra virgin olive oil is appreciated by top-class international Chefs. Cerasuola olives varieties coming from organic farming are also “Valli Trapanesi" PDO certified. Olives are carefully pitted without spoiling the pulp.
Definitely an excellent oil with delicate aroma and delicious taste.

Last week of October/ first week of November.
METHOD OF HARVEST
Harvested by hand.
Initial stone-removal process (within 12 hours from harvesting) followed by continuous extraction of the olive pulp at controlled atmosphere, the oil is allowed to settle and then decant naturally.
Natural fiber filters.
Spicy and grassy strong and persistent.
Fruity and creamy. Balanced, with almond and green tomato aftertaste.
Creamy oil, green color with golden yellow hints.
Perfect on great courses. Use it as a cream, like a vegetable “fumet” to enhance the flavor of strong taste courses, typical of “haute cuisine”.
