I've been using this flour to make pasta noodles and ramen noodles and it has worked brilliantly for both. It makes an excellent dough that is easy to work with and of course tastes great. I have a pizza crust recipe that also calls for semolina, I haven't tried it yet but I expect excellent results. It's not easy to find semolina flour in my area, let alone organic. I am so glad that I was able to find it here at a very reasonable price and with fast shipping. This flour will be a regular staple in my pantry.
