The origins of this recipe are lost in the oral traditions of Portofino locals. It might have originally developed as an expedient to make a pesto last, which was once considered an expensive sauce not intended for everyday use. Others say it was invented by local restaurants. In any case, it was born in Portofino and represents the essence of the village: quality and approachability. It is composed of 70% of our “salsetta” (tomatoes and vegetables) and 30% of our pesto.
So delicious on pasta but can be used on bruschetta as well.
