Lemon honey is produced only in a restricted area of eastern Sicily, as it is rather difficult to find lemon plantations of enough degrees to allow the production of pure lemon honey. This honey is very similar to that of orange from which it differs for a more acidulous note and a more pungent flavor.
Honey produced in Calabria, Sicily and Liguria. Its color is light amber, fragrant. It's quite sweet, with a rich flavor reminiscent of almonds and lemon rind. It crystallizes fast enough.
Pairing: Excellent as a sweetener in herbal teas and cold cocktails. On the table it goes well with both fresh cheeses such as ricotta and mascarpone, and aged cheeses such as caciocavallo and ragusano.

Brezzo honeys come from wild flowers and trees growing in unpolluted areas. Honey is then extracted by means of centrifugation. The following filtering, decanting and jar filling operations are important steps of the production cycle which is carried out naturally without resorting to thermal treatment.
