This honey is one of the favorite honeys of those who practice sports as its main feature is the high content of enzymes and mineral salts. The forest honeydew is not produced starting from the nectar of the flowers, but rather from the bees' collection of the sugary secretions present on different plant species of the wild wooded realities.
Produced in Piedmont. Dark amber color in the liquid state. The flavour is sweet, slightly acidic, the taste is typical of caramel and cooked fruit. The product is very rich in enzymes and minerals, for this reason is recommended for people that play sport or physical activity. It crystallizes very slowly.
Pairing: It is particularly suitable for use in the kitchen, for example as a component of condiments and desserts. It can pleasantly surprise when paired with cheeses such as toma di Murazzano or Roccaverano, taleggio or castelmagno.
Tasting: Malt, figs, dried fruit
Color: Very dark amber to black
Brezzo honeys come from wild flowers and trees growing in unpolluted areas. Honey is then extracted by means of centrifugation. The following filtering, decanting and jar filling operations are important steps of the production cycle which is carried out naturally without resorting to thermal treatment.
