Caponata is a relish of chopped eggplant and assorted vegetables. In Italy we used to eat the caponata hot (pretty warm) with meat or using it for bruschetta. The caponata is a piece of fried eggplant in sunflower oil and seasoned with a tomato sauce, chopped celery, onion, sugar, drenched olives, vinegar, capers, salt.
