Burrata is a traditional fresh cheese from Apulia. It is rindless and it is characterized by a soft stretched texture with the addition of double cream. Its peculiarity are the stretched cheese fibres in the texture. It shows a milky white colour. It is produced all year round.
In the fridge or cellar
Excellent on pizza; with tomatoes, basil and olive oil. Exquisite if deep-fried or as seasoning for pasta. Perfect pairing with a Chiaretto or a Cerasuolo d'Abruzzo wine.
HOW IT'S MADE
Fresh milk is pasteurized and some natural whey, saved from the pasteurization, is then added. Calf rennet is also added and the resulting curd is milled until it reaches the size of a walnut. The texture acidifies until it gets filata, stretched, and it is then put in boiling water. The cheese-maker cuts the texture according to the requested dimensions.
