
Telephone Suppli

What You’ll Need
- 1 pound of white rice
- 6 ounces minced beef
- 2 ounces of chicken livers
- 8 ounces mozzarella
- 2 ounces dried mushrooms
- 4 medium eggs
- 16 ounces tomato puree
- 2 cups meat broth
- 5 ounces Grana Padano cheese
- 5 ounces chopped onion
- 2 tablespoons butter
- 1 tablespoon heavy cream
- ½ cup white wine
- 2 tablespoons extra virgin olive oil
- Salt and black pepper to taste
- Breadcrumbs to taste
What You’ll Do
- Coarsely chop your chicken livers
- Melt your butter with some olive oil in a pan and let brown
- Add your livers and your previously soaked and minced mushrooms to the pan
- Cook for another five minutes before adding your white wine
- Allow to cook for several minutes and add your tomato puree
- Add salt and pepper to taste and allow to cook on medium head until sauce begins to cook down and thicken
- When your sauce is ready add your rice
- Stir often cooking your rice. Add your meat broth for the rice to soak up
- When risotto appears dry and dense turn off the heat.
- AddMix well and add two beaten eggs
- Butter and your grated Padano cheese
- Once fully blended place on a cool, dry plate.
- Cut your mozarella into small pieces and allow to drain fully in a colander
- Form oval shaped balls of your mixture in your hands. Put several pieces of mozzarella into the middle of each small oval
- Once all are complete, dip them into a bowl of beaten eggs and roll in breadcrumbs
- Fry your Suppli on high heat in a pan with plenty of oil making sure to fry evenly on all sides
- Serve immediately and piping hot!
