What You’ll Need

  • 1 pound of white rice
  • 6 ounces minced beef
  • 2 ounces of chicken livers
  • 8 ounces mozzarella
  • 2 ounces dried mushrooms
  • 4 medium eggs
  • 16 ounces tomato puree
  • 2 cups meat broth
  • 5 ounces Grana Padano cheese
  • 5 ounces chopped onion
  • 2 tablespoons butter
  • 1 tablespoon heavy cream
  • ½ cup white wine
  • 2 tablespoons extra virgin olive oil
  • Salt and black pepper to taste
  • Breadcrumbs to taste

What You’ll Do

  1. Coarsely chop your chicken livers
  2. Melt your butter with some olive oil in a pan and let brown
  3. Add your livers and your previously soaked and minced  mushrooms to the pan
  4. Cook for another five minutes before adding your white wine
  5. Allow to cook for several minutes and add your tomato puree
  6. Add salt and pepper to taste and allow to cook on medium head until sauce begins to cook down and thicken
  7. When your sauce is ready add your rice
  8. Stir often cooking your rice. Add your meat broth for the rice to soak up
  9. When risotto appears dry and dense turn off the heat.
  10. AddMix well and add two beaten eggs
  11. Butter and your grated Padano cheese
  12. Once fully blended place on a cool, dry plate.
  13. Cut your mozarella into small pieces and allow to drain fully in a colander
  14. Form oval shaped balls of your mixture in your hands. Put several pieces of mozzarella into the middle of each small oval
  15. Once all are complete, dip them into a bowl of beaten eggs and roll in breadcrumbs
  16. Fry your Suppli on high heat in a pan with plenty of oil making sure to fry evenly on all sides
  17. Serve immediately and piping hot!
