Italian Food: Lasagne
It shouldn't come as any surprise that in order to make the best and most authentic Italian food, you have to begin with the best ingredients. When making lasagne, that means you should have pasta from Italy, because genuine Italian pasta will always taste best.
If you can't secure that, you can always make your own pasta, using fine ingredients like Italian 00 flour, preferably Caputo 00 flour. If you're wondering where to buy 00 flour, it is readily available at your local Italian grocery store or Italian supermarket.
Ingredients for Authentic Italian Lasagne
• 1/4 teaspoon coarsely ground pepper
• 1 large egg, lightly beaten
• 1 carton ricotta cheese
• 4 cups shredded part-skim mozzarella cheese
• 3/4 cup grated Parmesan cheese
• 9 lasagna noodles
• 1-1/4 pounds bulk Italian sausage
• 2/3 cup water
• 2 tablespoons sugar
• 3 tablespoons plus 1/4 cup minced fresh parsley, separated into two groups
• 2 teaspoons dried basil
• 3/4 teaspoon fennel seed
• 3/4 teaspoon salt
• 3/4 pound ground beef
• 1 medium diced onion
• 3 minced garlic cloves
• 2 cans crushed tomatoes, or 43 oz. of crushed plum tomatoes
• 2 6-oz cans tomato paste
Preparation for Italian Lasagne
First, you'll have to cook the nine lasagna noodles in boiling water and then drain them. In the meantime, you can use a Dutch oven to cook the beef, the onion, and the sausage in a medium heat for about 10 minutes, or until you can see that there is no more pink in the meat. Once it's fully cooked, break up all the meat into crumbles, add some garlic, and then cook it for an additional minute before draining.
Now you can stir in the tomatoes, tomato paste, water, sugar, basil, fennel, 1/2 teaspoon of pepper and salt, and 3 tablespoons of parsley. Bring this whole mixture to a boil, then reduce the heat and simmer uncovered for approximately 30 minutes, stirring the ingredients occasionally. In a small bowl, you can mix the ricotta cheese, egg, and the remaining salt and parsley.
How do you layer a lasagna?
Preheat your oven to 375°F, and spread two cups of meat sauce into a baking dish which has not been greased, and which is sized at 13"x9". Place three of your noodles in this dish, along with about one third of the ricotta mixture. Then you can sprinkle a cup of mozzarella cheese on top of this, along with two tablespoons of your Parmesan.
Repeat these layers two more times, and then top with whatever cheese and meat sauce you have left over. This should make your baking dish just about full, and ready to place in the oven.
Cover the lasagne and bake it for 25 minutes, then remove the cover and bake for another 25 minutes, until the surface ingredients become bubbly. Allow it to set for at least 15 minutes before serving to your delighted guests.
