Five Non-Pasta Italian Dishes That You Will Love

Italian pasta is known as one of the most popular and famous foods of Italy, however – it is not the only one. So if you’re looking for authentic Italian food this is the perfect post for you. We searched and found five non-pasta Italian dishes that you’ll love!

You can find ingredients at your favorite Italian food store near you, which is an awesome online Italian grocery store. Creating traditional Italian dishes with fresh Italian ingredients is the secret to a successful authentic Italian recipe completion.

1. Bruschetta Provola Affumicata E ‘Nduja

Spreadable like butter, ‘nduja is a spicy salami from Calabria. You can recognize it by its typical bright red colour. Calabrian chilli pepper is one of the ingredients that make ‘nduja an unforgettable and super spicy tasting experience.

For the amateurs, we suggest starting with a small quantity of 'nduja on the top of your bruschetta.

Once you’ve cut your bread, toast it on both sides in preheated oven for five minutes at 390 F. The bread needs to become almost crunchy. Remove the slices of bread from the oven and prepare your provola.

Similar to scamorza, provola affumicata is a lightly smoked cheese with a unique taste. You can liken it to an aged mozzarella, but with a different shape.

The Provola's affumicata place of birth is uncertain, but is supposed to originate between Campania, Molise and Puglia.

Once you have cut the provola affumicata into small pieces, spread ‘nduja over the bread then garnish with your provola affumicata cubes. Put the bruschetta into the oven and wait until the cheese is melted.

If you want to try something different, you can add organic extra virgin oil on the top, to enhance the flavor with a final touch.

2. Tasty Vegetables Stuffed Focaccine

Our second suggestion is focaccine filled with healthy and tasty green ingredients.

For the dough, you’ll need 15 oz of Italian 00 flour 2 spoons of extra virgin olive oil and yeast. You can add pitted olives if you would like. Knead it until it becomes elastic and smooth.

00 flour from Italy is the best choice if you want to make pizza, cakes and focaccia.

Once the dough is ready, place it in a bowl and let it rise until it doubles in size. Cover the bowl with a dish towel and wait 90 minutes. Split the dough into 8 small pieces.

For the filling, you will need: 10 oz. of zucchini, 10 oz. of chopped onions and 3 oz. of pitted olives (optional). Peel the onions and then chop them up along with the zucchini. Sauté them in a large pan with two spoons of oil for 10 minutes.

You can use 8 mini tart moulds and spread out the small pieces of dough inside them. Fill the dough with zucchini, onions and a spoon of pitted olives. Once you have covered the filling, put your focaccine in a preheated 200 F oven for 15 minutes.

Please consider the leavening time for this recipe, if your desired outcome is an amazing savoury snack that is considered “legit” in Italy.

3. Potato Pizza with Mozzarella and Anchovy

This recipe is for pizza lovers who want to try something different.

The main ingredient for the dough will be potatoes, mixed with 4 oz of imported flour from Italy.

You can choose even Caputo gluten-free flour for those with gluten-sensitive issues. It is a perfect mix of natural ingredients, ideal for baking pizza, sweets and bread.

Boil the potatoes in salted water, peel them and then mash with a potato masher. Knead with the flour and a pinch of salt. Split the dough into 8 rectangular portions of 3 oz and create 8 small pizzas.

Put your 8 pizzas on baking paper (parchment is best). Cut 10 oz of mozzarella into small pieces and let them dry for 15 minutes. A tea towel could be useful if you want to soak up moisture from your mozzarella. All you need to do is set the slices on it and wait.

Garnish each potato pizza with mozzarella and one or two fillets of anchovies. Baste with oil, add oregano and pepper, then bake it at 440 F for six minutes. 4. Mushroom Risotto

Looking for a different Italian food? Risotto could be the one that might tickle your gourmet senses.

You can use different types of rice. There are some rices that come with black truffle, vegetables or with radicchio.

Are you ready to experience the delectable mushroom risotto recipe? Risotto is a great option if you want something different from Italian pasta. The rice’s carbohydrates are easily absorbable and your stomach can digest them better.

We suggest you use five big fresh porcini mushrooms, a shallot, 10 oz of rice, parsley, butter, extra virgin olive oil and Parmigiano cheese. You can try dry porcini mushrooms too but remember to rehydrate them for 5 minutes in a bowl of warm water.

Wash the mushrooms under cold water and be sure to brush off the dirt from them. Then you can cut them into slices and sauté them in a pan with finely chopped parsley, salt and pepper for five minutes.

Chop the shallots and then in a saucepan, sauté until golden brown. Then add the rice and cook it for a minute. Add ½ glass of dry white wine and let it evaporate. Add 5 cups of chicken or vegetable stock. Stir the risotto for 15 minutes. Now, you can add the porcini, a spoon of butter and fine grated Parmigiano cheese.

5. Oven Chicken Stew with Vegetables

Spezzatino is the Italian name for this stew. This is a super easy, delicious recipe that you and your family will enjoy thoroughly.

First, cut the chicken into small pieces and put them in a baking dish. Now you can choose your favourite or seasonal vegetables like: zucchini, potatoes and carrots. Cut them into small pieces. You could also add pepperoni, if you like. Arrange all the veggie pieces around the chicken.

Then add cherry tomato juice or double concentrated tomato sauce to your baking dish. These ingredients are the typical mixings for pasta but today, we’re trying something different!

Add salt, pepper and a mix of your favourite herbs. Then pour ½  glass of dry white wine over your mix. Now, all you have to do is bake it for at least 30 minutes in your oven at 390 F.
