Recipe for Italian Rainbow Cookies


  • 1 cup of sugar
  • 8 ounces of almond paste
  • Unsalted butter
  • 4 eggs separated
  • 1/4 cup milk
  • 2 cups all-purpose flour
  • Red and green food colouring
  • 1/2 cup semisweet chocolate chips
  • 1/2 cup raspberry jam

    Steps to Prepare-

    2. Put it in a bowl with the remaining unsalted butter and whisk until smooth.

    4. Fold it in flour and divide the batter in three bowls.
    5. In the first two bowls, add the red and green food colourings separately.
    6. Take a greased parchment-lined baking pan and spread them out evenly. Bake them for 10 to 12 minutes and let it cool.
    7. Spread the raspberry jam on top of the green layer and place the third undyed baked layer on it. Repeat this process to create sandwich cookies. You can glaze the top with molten chocolate as well.
    8. Once all done, freeze the entire batch overnight.
